Learn hands-on salami making with Chef Seamus Platt and Head Butcher Scott Johnson of The Shambles. Over three hours we will cover the basics of traditional salami production by breaking down a pork picnic shoulder, grinding, mixing, and stuffing salami as we discuss the science and technique behind the process. Leave with a gift bag including salami, pate, bacon, and other goodies!
